About This Role
Serving as a Sommelier at Wagtail, a premium rooftop restaurant and bar in the heart of the City of London, involves creating exceptional guest experiences. This role combines extensive wine knowledge with outstanding service, commercial awareness, and a genuine desire to make every visit memorable in a premium dining environment with stunning London views.
Responsibilities
- Take ownership of the guest wine experience
- Confidently guide guests through the wine list
- Make personalised recommendations
- Support the wider team with wine knowledge and training
- Help drive wine sales and maximise opportunities to increase spend per head
- Ensure recommendations are genuine, knowledgeable and focused on the guest
Requirements
- Strong knowledge of wine, including key regions, grape varieties and styles
- Genuine passion for continuing to develop expertise
- Previous experience in a Sommelier or wine-focused role within a high-quality or premium dining environment
- Confident engaging with guests and able to make thoughtful, personalised recommendations based on individual tastes, menus and occasions
- Understand how to drive wine sales and increase spend per head while maintaining an authentic and guest-focused approach
- Adapt communication style to make wine approachable and engaging for different guests
- Take pride in presentation, service standards, wine storage and the overall guest experience
- Enjoy sharing knowledge and supporting the wider team through coaching, training and collaboration
- Enthusiastic, personable and genuinely passionate about delivering exceptional service in a premium environment
- Remain calm and confident during busy services and consistently maintain high standards
