Responsible for monitoring and maintaining the highest standards of hygiene, sanitation, and food safety across the hotel. The Hygiene Officer ensures compliance with hotel policies, HACCP principles, statutory requirements, and international food safety standards, supporting the hotel in delivering a safe and hygienic environment for guests and team members.

Key Responsibilities

  • Conduct regular hygiene and sanitation inspections across kitchens, restaurants, staff facilities, storage areas, and other operational areas.
  • Monitor food handling, preparation, storage, temperature control, and personal hygiene practices.
  • Ensure compliance with HACCP procedures, food safety standards, and hotel hygiene policies.
  • Identify hygiene risks and recommend appropriate corrective and preventive actions.
  • Maintain accurate hygiene inspection records, checklists, temperature logs, and other required documentation.
  • Conduct regular audits of cleaning and sanitation practices and follow up on identified deficiencies.
  • Monitor pest control activities and coordinate with relevant departments and service providers.
  • Support food safety and hygiene training for culinary, F&B, housekeeping, and other relevant team members.
  • Conduct regular inspections of food storage areas to ensure proper stock rotation, labelling, cleanliness, and safe storage practices.
  • Assist with investigating food safety incidents, guest complaints, and hygiene-related concerns.
  • Liaise with relevant departments to ensure corrective actions are implemented within the required timeframe.
  • Maintain awareness of current food safety legislation, industry standards, and best practices.
  • Support internal and external hygiene audits and ensure the hotel remains prepared for regulatory inspections.
  • Promote a strong culture of food safety, personal hygiene, cleanliness, and continuous improvement throughout the property.
