About This Role
Leading the kitchen and elevating the craft of cooking is the core of this Executive Chef role at Lucky Fish Dania. This opportunity is for a hands-on leader to drive kitchen operations, develop talent, and consistently deliver exceptional food with care.
Responsibilities
- Lead all back-of-house operations, taking responsibility for culinary execution, team performance, food safety, and kitchen financial results
- Hire, train, coach, and develop Sous Chefs, cooks, prep cooks, and utility team members
- Maintain high standards for recipes, scratch-made preparation, portioning, plating, and food quality
- Direct daily service, ensuring consistent execution and efficient ticket times in a high-volume environment
- Oversee purchasing, receiving, inventory, product quality, and vendor relationships
- Manage food and labor costs through effective scheduling, forecasting, portion control, and waste reduction
- Ensure the team works confidently with fresh seafood, proteins, sauces, produce, and other fresh ingredients
- Conduct daily shift briefings and ensure the kitchen is stocked, prepped, organized, and ready for service
- Maintain rigorous standards for food safety, sanitation, equipment care, and kitchen cleanliness
- Partner with restaurant leadership and front-of-house management to coordinate service and deliver an excellent guest experience
- Identify opportunities to improve kitchen systems, efficiency, and team performance
- Build a kitchen culture rooted in teamwork, accountability, and pride
Requirements
- Experienced culinary leader who knows how to run a high-volume, full-service scratch kitchen
- Strong culinary technique
- Sound business judgment
- Ability to develop a team that performs with confidence and consistency
- Understanding of fresh ingredients, seafood, proteins, sauces, prep, and presentation
- Ability to command the line during a rush while keeping a clear view of staffing, inventory, food costs, and the guest experience
- Lead with clear communication, accountability, and respect
