About Rosario

Rosario is the beginning of a story. A restaurant, yes, but with this crazy desire to showcase a different vision of Spanish cuisine in France. Our ambition is to create a new Iberian scene, modern, lively, popular, and demanding at the same time. To show that Spanish cuisine is not just a paella by the sea (even less with chorizo) – it is a richness of terroirs, products, gestures, moments to share. No false promises, just dishes made with love, which combine respect for traditions and the audacity to reinvent them. Because we are convinced that cooking should be a lively, sincere, and straightforward moment. This vision we share with our chef José María, who comes straight from the Spanish Basque Country, whose Michelin-starred background has never extinguished the flame of simplicity.
