Proof Bread is one of the country’s only fully sourdough bakeries and flour mills, rooted in the Phoenix metro area and committed to a 14,000-year-old craft. We mill heritage grains on our own stone mill, ferment every dough naturally, and bake without shortcuts, conditioners, additives, or industrial tricks. What we do is closer to an old-world bread workshop than a modern factory. Every day our team produces thousands of loaves and pastries—from country sourdough to award-winning sourdough burger buns—using long fermentation, intentional technique, and ingredients grown by local farmers. As we expand across the Valley, Proof remains a craft-forward, community-powered company: part bakery, part mill, part educational studio, and part creative hub.
