Cousbeldi Your couscous at home ... Behind every beautiful thing, there is a beautiful story. This is mine. Chda (Grandmother) taught my mother how to make seksu beldi (traditional couscous), and she in turn passed this know-how on to me. This flavorful and magical dish has been prepared for generations by my ancestors, for 2 centuries BC. As a child, I watched Chda cook librine (barley couscous) drizzled with argan oil. What a delight and what a taste journey! This dish is a culinary heritage, preserved until today. I, in turn, share this treasure with you, and invite you to discover or rediscover it with the different couscous from the regions of North Africa. This is my way of giving back what my ancestors gave me.
